Tahitian vanilla is exceptional in every way. Produced in very limited quantities in French Polynesia, it is, among top chefs, recognized as a must-have.
And for good reason. These Tahitensis vanilla beans have some characteristics of their own.
First of all, they are visually impressive : with a moisture content of 40 to 45%, they are excessively large, soft and fleshy pods.
But more importantly, it is their aromatic profile that is unique. While a Planifolia / Bourbon vanilla (Madagascar vanilla for example) will have cocoa and creamy notes, Tahitian vanilla is more complex and subtile.
Its low vanillin content (0.8 to 1% on average), allows finer aromas to develop: aniseed, floral and fruity flavors. An incredible blend of freshness and sweet intensity.
Our vanilla comes in a glass tube for 10 / 20 pods, or in a 250 g vacuum refill bag. Keep it in a dry and cool place, away from light. Vanilla does not expire, but we recommend using it within 24 months to keep all the intensity of its flavors.
