Vanilla cultivation
Vanilla is the fruit of an orchid that grows in vines in most tropical areas of the world.
The vanilla tree needs love and time... it only starts to bloom after 3 years. Its fragile flowers open just once, and for a few hours only. Thus, they must be pollinated at dawn, by hand. This requires patience, rigor and skills from the "marieuses": this is the name poetically given to the women who carry out this delicate operation.
It is then necessary to wait 6 to 8 months so that the flower, after turning into a pod, reaches its full maturity and can be harvested. Then comes the stage of preparation...

Did you know?
The vanilla known as "Gourmet" represents less than 10% of the annual production. It is made from perfectly mature, unsplit pods, checked and selected one by one, manually.
Depending on the origin, the method of preparation of the pods differs, which gives each type of vanilla a unique aromatic profile.
This work requires great expertise from the local preparers. After olfactory control and meticulous calibration of the vanilla beans, they are put in bundles before being sent to the finest tables around the world.
